Orange Marmalade Stuffed French Toast Casserole

This dish was kicking in the back of my head all night. What to do with that leftover sourdough?! AND I had some orange marmalade in the fridge. (I love that sweet bitter taste of the marmalade). I remembered making this stuffed casserole once before for a brunch so I got up, fed the pup, made a cup of coffee and went to town! Once I got it together and in the fridge to soak (ok it was supposed to soak 8 hours bit I needed it like NOW!) I texted my friend, Vi, to invite her and waited for the roomie to wake the heck up! An hour later at 350 deg…breakfast for three! I threw some toppings on the counter, grabbed some yogurt from the fridge, and we chowed down!!

AND Vi helped me figure out how to post from the WordPress app on my iPhone. So cool! (her and the app!! We couldn’t surf this am because of the rain so why not pig out?!)

    1. The stuffed french toast casserole I made in the picture! Did you see it? Or did you want the recipe? Butter one side ofthe bread, layer bottom of the dish with bread butter side down, spoon marmaled on top, cover with bread butter side up. Pour mixture of beaten eggs, vanilla, nutmeg, and milk over it. I kinda just eyeballed it with the amount of leftover bread. Small casserole dish, so 4 eggs and about a cup and a half of milk.
